Ah the sausage patty, such a great accompaniment to any hearty weekend type breakfast or in a sandwich. Go on, make yourself a vegan McMuffin!
The longer I am vegetarian the more I think these are like the real thing, but I can't be sure anymore what that would be like.
Vegan Sausage Patty adpated from The Happy Herbivore Cookbook
Serves 4
1/2 cup cooked pinto beans
1 stalk celery, minced
1 carrot, minced
1/2 tsp olive oil
1/2 tsp basil
1/2 tsp thyme
1/2 tsp oregano
1/2 tbsp yeast flakes
1/2 cup dried minced soya
1/2 cup vital wheat gluten
1 tbsp fennel seeds, crushed with a mortal and pestle or coffee grinder
Dash crushed red chilli flakes
1 tsp paprika
3/4 cup water
2 tbsp soya sauce

2 tbsp soya sauce
- Saute the celery and carrot in olive oil for a few minutes until soft and set aside.
- Mash the beans with a fork or blend in a food processor until no whole beans are left, set aside.
- Place all of the dry ingredients together in a large bowl and mix well.
- Add the beans, soy sauce and water into the large bowl with the dry ingredients. Mix quickly with your hands to combine everything.
- Divde the dough into 4 equal parts and form patties. Wrap each one tightly in foil, twisting the ends closed.
- Place in a steamer and steam for 40 minutes, finish with a light frying.

ReplyDeletethese sound lovely - I feel a bit the same way about some of my veg recipes when I compare them to meat - hard to compare when it is so long since I had the carnivorous option
